Pomegranate Studded Quinoa

Whether you’re in love, lust or flying solo tonight, whip up this seriously sexy S&M sounding dish – Pomegranate Studded Quinoa.  It’s energy enhancing, libido stimulating and pleasure inducing. Plus, it’s beautiful to look at.

The details: pomegranate is an ancient aphrodisiac which helps release dopamine, the pleasure neurotransmitter.  Quinoa is rich in B vitamins which helps sustain energy levels. Fennel contains the phytonutrient, oestragole, which boosts libido. Cilantro, mint and dill all increase circulation to the brain and peripheral tissues.

  • 1/2 cup of water
  • 2 tbl  plus 1 tbl of olive oil
  • 2 medium fennel bulbs, cut length-wise
  • sea salt and freshly ground black pepper
  • 2 tbls fresh lemon juice
  • 1 1/2 teaspoons ground cumin
  • 1 cup quinoa, rinsed
  • juice from 1 lemon
  • 1 chile, seeded, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint, chopped
  • 1 tsp fresh dill, chopped
  • 1/4 cup pomegranate seeds



Pour 1/2 cup of water into a frying pain.  Add fennel, sea salt and pepper. Cover with a saucepan lid and steam the fennel (8 minutes).  When almost cooked, add 2 tbl of olive oil, to give fennel a lightly golden color (4 minutes). Stir in lemon juice and cumin for 1 minute, then set aside.

Cook quinoa as per packet directions. Drain quinoa, return to pan, cover then let it sit for 15 minutes. Fluff with a fork to aerate it. Don’t skip this step – it makes the quinoa fluffy.

Add lemon juice and remaining 1 tbl of oil to quinoa; stir. Add fennel mixture, chile, and herbs. Toss gently and serve.
